Pine needles provide a wonderful aroma to vinegar and it's a cheap alternative to balsamic. All you need are a few bunches of pine needles (I prefer Scots pine, but any well-scented pine needles will work) and cider vinegar.

Ingredients:

600ml cider vinegar (organic is best)
2 generous handfuls of pine needles

Method:

Coarsely chop the pine needles then place in a mortar and bruise (this releases more of their flavour).

Pack the leaves into two 500ml glass jar with a rubber lid insert. Pour over the vinegar, filling the jar to the top.

Secure the lid then set aside in a darkened cupboard for six weeks to infuse. Drain through a fine-meshed sieve into a bowl. Discard the leaves, wash and sterilize one of the jars (or use a bottle) and pour in the scented vinegar.

Your pine needle vinegar is now ready to use.
