Pika, made with onions and chilies, is a standard addition (condiment) on the table in Curaçao with diners adding as much as they desire during the meal. As well as Curaçao it's also prepared in Sint Eustacius and Saba. A slightly different version is prepared in Bonaire (the recipe is also presented on this site).

Ingredients:

2 habanero, Scotch Bonnet, or the hottest chilies you can find, minced
1 large onion, diced
White vinegar to cover

Method:

Pack the chilies and onion to a large pickling jar with a vinegar-proof lid. Fill the jar with vinegar, ensuring that the onions are completely covered.

Secure the lid and set aside for a week to mature. Once opened, store in the refrigerator.
