A simple way to preserve and enjoy this coastal wild food and it will only take you 10 minutes to make!

Ingredients:

100g rock samphire
1/2 lemon, sliced and cut into wedges
2-3 cloves of garlic
1 1/2 tsp coriander seeds
1 tsp black peppercorns
Pinch of salt
225ml white wine vinegar
225ml water

Method:

Wash the rock samphire, then snip off any fibrous ends.

Combine all the ingredients in a medium-sized saucepan then slowly heat until steaming. Bring just to a simmer and cook for a few minutes, then immediately pour into a 500ml jar that's been sterilized and warmed in a low oven.

Set aside to cool then label and stor in a cool, dark place to mature for 2 weeks.

After opening store in your refrigerator.
