Penzance Cake

This is a classic, simple fruited ginger cake from Penzance in Cornwall.

Ingredients:

500g plain flour
1/2 tsp bicarbonate of soda
pinch of salt
125g butter, softened
2 tsp ground cinnamon
500g currants
250g crystallized ginger, chopped
125g mixed peel, chopped
2 eggs, beaten
150ml milk

Method:

Sift together the flour, bicarbonate of soda and salt into a bowl. Add the butter and rub it into the flour mix until the ingredients come together and resemble fine crumbs.

Now stir in the cinnamon, currants, ginger and mixed peel. Add the beaten eggs and milk and bring everything together as a soft dough.

Turn this into a greased and lined 25cm diameter springform cake tin. Transfer to an oven pre-heated to 170°C and bake for about 90 minutes, or until the cake is cooked through and golden brown on top and a skewer inserted into the centre emerges cleanly.

Allow to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely before slicing into wedges and serving.
