Ingredients:
75g well-textured mushrooms (oyster or porcini) cut into strips
350g penne pasta
40g butter
2 cloves garlic, finely chopped
200ml water
150ml double cream
75g chopped parma ham
Method:
Cut 75g of the mushroom cut into strips. Cook 350g penne until just al-dente and then drain. Meanwhile melt 40g butter in a pan, add the mushrooms and two finely-chopped cloves of garlic, cooking for two minutes. Add 200ml water and simmer, uncovered for 10 minutes or until the liquid is reduced by half.
Stir-in 150ml double cream and add the pasta, cooking for a further 2 minutes. Finally add 75g chopped Parma ham.
