Combine the sugar, coffee and butter together in a saucepan and bring to a boil, stirring all the time. Continue heating until the mixture reaches 115°C as measured on a confectioner's thermometer (the soft ball stage).
Remove from the heat then add the almond extract and beat the mixture until it begins to stiffen. Scatter the nuts over the base of a well-buttered tin and pour the fudge mixture over the top. Roughly cut into squares with a buttered knife, then allow to cool completely before cutting into squares and storing in an air-tight jar.
