Peach Sherbet
This is the a recipe for peach sherbet, a classic American frozen dessert or snack that can also be used as a palate cleanser between the courses of a meal.

American-style sherbets are very similar to sorbets in that they are basically frozen fruit juices, however sherbets tend to either have milk added before freezing or contain gelatine and this gives the product an extra creaminess.
Ingredients:
1l peach puree
360ml orange juice
60ml lemon juice
240ml water
300g sugar
Method:
Select enough ripe peaches so that when they are peeled and passed through a sieve you have 1l or peach purée. Add the orange juice and lemon juice to this. Meanwhile add the sugar and water to a pan and bring to a boil. Allow the syrup to cool to lukewarm then add to the fruit mix.
Place in the refrigerator and cool for 2 hours then pour the mixture into the bowl of an ice cream machine and churn according to the manufacturer's instructions.
