Pâte de piments végétariens (Seasoning Pepper Paste) is a traditional French Guianan (Guyane) recipe for a seasoning paste or dip made of seasoning peppers (piments végétariens) that has all the flavour of Scotch bonnets, but little of the heat. Method:

Place a small pan over low heat. Once hot add the olive oil and use to gently fry the shallot for 2 minutes.

Wash the seasoning peppers, remove the stems then add the the pan with the shallots. Increase the heat to medium and stir-fry for 10 minutes until softened.

Add in the balsamic vinegar and the sea salt, bring to a simmer and stir to combine. Take off the heat, allow to cool slightly then turn into a blender and render to a paste.

Scrape into a bowl if using soon or scape into a lidded jar if storing for a while. It will keep in the refrigerator for 2-3 days, but the sooner it's consumed or used up the better.
