Pasta Piri-piri (Piri-piri Chilli Paste) is a traditional Portuguese recipe for a thick paste made from a blend of cooked piri-piri chillies, bell pepper, garlic, and lemon juice in an olive oil base. Ingredients:
150g piri-piri chillies chopped
100g red bell pepper, chopped
2 garlic cloves, chopped
2 small shallots chopped
120ml olive oil (plus more as needed)
2 tbsp lemon juice
½ tsp ground cumin
Salt and freshly-ground black pepper, to taste
Method:
Combine the chillies, bell peppers, garlic and shallots to a food processor and process until finely chopped.
Transfer to a saucepan and add the olive oil. Place over low heat and cook about 20 minutes, stirring occasionally. Adding a little more olive oil during this time if needed. Be careful the mixture does not burn during this time.
Add seasonings and stir to combine. Cook for another 5 minutes or so to allow the flavours to develop.
Cool and transfer to a food processor. Process until smooth.
Transfer to a jar and refrigerate. Use a spoonful at a time.
