Piloncillo is lump sugar, a traditional cone of dark brown semi-refined sugarcane. This shape and type goes back to the production of Sugar in Mediterranean Europe during the 13th and 14th century.

Ingredients:

1 x 227g Piloncillo Cone {also sold as panela}
1l Very Hot Water
1l Cold Water
125ml Freshly Squeezed Lime Juice
Ice Cubes for serving

Method:

Place the hole piloncillo cone into a large heat-resistant glass pitcher. Carefully pour over the 1l of very hot water into the pitcher.

Stirring occasionally, let the piloncillo completely dissolve into the water. Note that this can take between 30-40 minutes.

Once the sugar has completely dissolved, pour in the cold water and lime juice, and stir to blend together.

Store the drink your refrigerator until serving. Serve in glasses over ice.
