Panlevi (Sponge Biscuits) is a traditional Aruban recipe for a classic egg and flour sponge biscuit (cookie) typically used as a base for trifles or as a snack to accompany tea or coffee. Ingredients:
4 eggs
200g sugar
1/4 tsp ground mace
1 tsp vanilla extract
350g flour
pinch of salt
Method:
Break the eggs in a bowl and beat until frothy. Gradually stir-in the eggs, whisking all the while then add the ground mace and vanilla extract. Sift the flour and salt into the bowl and fold in to combine.
Grease a baking tray and drop the batter by the tablespoon onto this, forming heaped mounds, ensuring you leave at least 5cm between each biscuit.
Transfer to an oven pre-heated to 160°C and bake for about 20 minutes, or until the edges of the biscuits are lightly browned. Proper panlevi will have a crunchy outside and a chewy centre.
