Panko Fried Oysters

Panko Fried Oysters: An American recipe for a starter of oysters deep fried in a panko breadcrumb coating and served with a spicy dipping sauce that makes an excellent Valentine's day appetizer for two to share.
Ingredients:
225g fresh oyster meats
1 large egg, lightly beaten
1 tbsp cold club soda
For the Flour Coating:
40g plain flour
1/4 tsp freshly-ground black pepper
1/2 tsp fine garlic powder
1/8 tsp cayenne powder
1/4 tsp sea salt
1/4 tsp
Italian herbs
For the Panko Coating:
90g panko breadcrumbs
1/2 tsp
Italian seasoning
For the Hot Sauce:
4 tbsp mayonnaise
2 tbsp prepared horseradish
1 tsp Dijon mustard
1 tbsp fresh lemon juice
1/8 tsp brown sugar
1 tsp hot chilli sauce (or to taste)
Method:
Begin with the hot sauce. Simply mix all the ingredients together in a small bowl. Cover with clingfilm (plastic wrap) and store in the refrigerator for several hours to allow the flavours to develop.
Rinse the oysters then pat dry with kitchen paper.
Beat the egg and club soda together and place in a small bowl. Season the flour with the spices and herbs then arrange on a small plate.
Mix the panko breadcrumbs and Italian seasoning on another plate.
To bread the oysters, first dip 3 oysters in the egg mix. Shake off any excess then dip in the flour, turning to coat evenly. Shake off any excess then dip back in the egg mix before dipping in the panko breadcrumb mix. Shake off any excess and sit on a plate.
When all the oysters have been evenly and well coated in breadcrumbs, cover them with clingfilm (plastic wrap) and refrigerate for 2 hours.
When ready to prepare, heat oil in a deep fryer or wok to 180°C. When the oil is hot, add the oysters in small batches and cook for about 1 or 2 minutes, or until golden brown.
Remove the oysters from the oil and drain on kitchen paper as you cook the next batch.
Serve hot, accompanied by the hot sauce.
