This is a classic modern Cornish recipe, based on an Italian original, using fillets of John Dory. The recipe also works well with fillets of that other classic Cornish fish, the megrim sole.

Ingredients:

2 eggs
8 fillets of John Dory
dry breadcrumbs
flour for dusting
8 fresh sage leaves
olive oil, for frying
salt and freshly-ground black pepper, to taste

Method:

Beat the eggs in a bowl, season with salt and black pepper then season again.

Dip the fish fillets in flour to coat. Shake off the excess then dip in the beaten egg to coat then cover uniformly with the breadcrumbs.

Heat oil to a depth of 6mm in a shallow frying pan. Add the fish fillets and the sage and cook for about 8 minutes, or until the fish is uniformly golden brown on both sides.

Carefully remove the fish from the pan and drain on kitchen paper. Arrange on a warmed serving dish and top each fillet with a sage leaf.

Serve immediately.
