This is a classic method of generating raw juice from Oregon grapes (Mahonia). I've published previously on boiling Oregon grapes to extract juice. This method pulps the fruit to extract the juice directly for use in other recipes.

Ingredients:

1kg Oregon grapes

Method:

You can process the fruit by pulsing in a food processor. However, that risks chopping the seeds and making the juice bitter. I think the following is a better method of extracting the fruit juice (this also works for grapes, currants, gooseberries and other small hard-skinned fruit).

Place the fruit in a heat-proof bowl then microwave for 30 seconds. Take a potato masher and mash the Oregon grapes until they burst.

Scoop the mashed fruit into a cloth bag then squeeze to extract the juice. This can be sweetened with sugar and diluted with water to make drinks. It can also be used as a base for jams (it contains a lot of pectin and will help setting) or as a flavour base for ice cream and sorbets.
