Orange Salad is a traditional British recipe for a classic salad made from segmented oranges mixed with tarragon and French dressing that's served on a bed of endives or lettuce and which can be served as a starter or as an accompaniment for duck or other game birds . Ingredients:
2 oranges, peeled
chopped fresh tarragon and/or mint French Dressing
crisp endive or lettuce leaves, washed and drained
Method:
Divide the oranges into segments (remove all the skin, pith and pips) then place in a shallow dish, sprinkle with the herbs and pour the dressing over the top.
Set aside to stand for a short time to infuse then spoon the orange mixture on a bed of lettuce and/or endives. Chill for at least 1 hour before serving.
