Cut the orange into 8 wedges and remove any seeds. Place the orange pieces in a food processor then pulse to chop before blending until the peel is finely ground (if the mixture becomes too stiff add a little of the orange juice to make it easier to blend).
Now add the dates, egg and 3 tbsp butter. Blend the ingredients until thoroughly combined.
Mix together the flours, baking powder, baking soda and sugar in a large bowl. Add the blended orange along with any remaining orange juice and stir until the dry ingredients are just moistened.
Divide the batter between the greased wells of a 12-cup muffin tin, filling each cup no more than 2/3 full.
Transfer to an oven pre-heated to 220°C and bake for 15 minutes, until well risen, golden brown on top and cooked through.
Allow to cook in the muffin tins for 5 minutes then turn out onto a wire rack to cool further.
