Ingredients:

For the Filling:
240g cream cheese, softened
1 egg
65g granulated sugar
yellow food colouring
red food colouring
200g dark chocolate chips

For the Cupcakes:
420g plain flour
400g granulated sugar
90g cocoa powder
2 tsp baking soda
1/2 tsp salt
500ml water
150ml vegetable oil
2 tbsp cider vinegar
2 tsp vanilla extract

1/2 batch Orange Cream Cheese Frosting

Method:

Begin with the filling. Beat together the cream cheese and egg until combined then add the sugar and continue beating until the mixture is pale and creamy and all the sugar has dissolved. Now add two drops of yellow food colouring and one drop of red food colouring. Mix to combine then add more colouring, as needed, until the mixture reaches the desired shade of red. Stir in the chocolate chips and set aside.

For the Cupcakes: Combine the flour, sugar, cocoa, baking powder and salt in a large bowl and set aside. In a smaller bowl, whisk together the water, vegetable oil, cider vinegar and vanilla extract. Add the wet ingredients to the dry ingredients and stir with a spoon to combine.

Spoon the resultant batter into cupcake baking pans lined with paper liners, filling the liners no more than half full of the batter. Place 1 tsp of the filling mix in the centre of each (as the cupcake bakes the batter will rise to enclose the filling.

Transfer to an oven pre-heated to 170°C and bake for about 25 minutes, or until the cupcakes are done. Allow to cool and either dust with a little icing sugar or cover with orange icing (frosting). Serve slightly warm.
