Omo tuo is an Hausa accompaniment made from rice boiled until soft and shaped into balls. Originally it was probably made from native West African rice,
Oryza glaberriam though these days it is more commonly prepared from imported Thai Jasmine rice.
Ingredients:
400g rice long grain white rice, jasmine
800g water
1 teaspoon salt
Method:
Place the rice in a bowl. Cover with plenty of water then set aside to soak for 3 hours. After this time drain the rice in a sieve then wash thoroughly under cold, running, water to ensure that all excess starch has been removed.
Combine the rinsed rice, salt and water in a saucepan and bring to a boil. Reduce the heat to medium and allow the rice to steam, covered, in the saucepan, until most of the water has been absorbed.
Using a sturdy wooden spoon, pound the rice using a mash and fold method. Bring the rice toward the side of the pot, then turn over. Repeat until the rice is mushy and glutinous.
To serve, scoop the desired amount into a wet bowl and swirl around until balls are formed.
Omu tuo may be served with any type of soup but is it traditionally served on Sunday to accompany peanut soup or palm nut soup.
