Ochazuke (Japanese Green Tea Rice)

This is a classic Japanese method of using-up left-over rice by mixing with green tea and adding a range of different toppings, which can be rice, vegetables, pickles or a combination.

Ingredients:

150g steamed sushi rice
250ml brewed sencha or genmaicha Japanese green tea (hot)

For the Toppings:
100g steamed and flaked fish
1 tsp pickled ginger
2 tbsp fried shiitake mushrooms
6 strips of nori (seaweed)
1 tsp toasted sesame seeds
a little soy sauce

Method:

Place the rice in a soup bowl and pour over the hot tea. Add a splash of soy sauce and sprinkle over the toasted sesame seeds. Mix the fish with the mushrooms and pickled ginger and sit this in the centre. Flake the nori and scatter over the top. Serve.
