Oatmeal Muffins: An American recipe for a soda bread made from a blend of flour and rolled oats blended with buttermilk or sour milk.

Ingredients:

150g (1 cup) quick-cook oats
250ml (1 cup) buttermilk or sour milk (if you do not have any, add 1 tbsp lemon juice to 250ml [1 cup] milk to sour it)
150g (1 cup) unbleached flour, sifted
1/2 tsp baking soda
65g (1/3 cup) butter
1 large egg
1 tsp baking powder
1 tsp salt
100g (1/2 cup) brown sugar

Method:

Combine the oats and sour milk in a bowl. Mix well to combine then set aside to stand for 60 minutes, for the oats to soften.

After this time, sift together the flour, baking powder, baking soda and salt then set this mixture aside.

In another bowl, cream together the butter and brown sugar with an electric whisk until pale and fluffy. Add the egg and beat until thoroughly combined then mix in the dry ingredients, alternating with the oat mixture. Blend well after each addition, but do not mix.

As soon as the last of the ingredients have been combined divide the batter between muffin wells lined with paper or silicone cases, ensuring that none of the wells are filled more than 2/3 full.

Transfer to an oven pre-heated to 200°C (400F) and bake for about 20 minutes, or until well risen and golden brown.

Serve for breakfast, accompanied by jam, preserves or marmalade.
