This is one of my favourite biscuit recipes. These rustic biscuits (cookies) are excellent with a cup of tea or coffee at any time, but are really good for breakfast and bring you the health benefits of oats in an easily consumed form.
Ingredients:
50g butter
125g caster sugar (brown is best)
1 egg, beaten
50g plain flour
½ tsp salt
½ tsp
baking powder
175g oatmeal or porridge oats
125g currants (raisins or mixed fruit can be substituted)
2 tbsp
sesame seeds
Method:
In a large mixing bowl cream together the butter and sugar until the mix is light and fluffy. Add the beaten egg gradually and mix until combined. Sieve the flour, salt and baking powder into the bowl and mix well. Add the oats, sesame seeds and currants, mixing together thoroughly.
Meanwhile pre-heat an oven to 180°C (350°F/Gas Mark 4) and place spoonfuls of the mixture at well-spaced intervals on the baking trays. Flatten the biscuits with the back of the spoon and bake for about 15 minutes.
Allow to cool thoroughly before transferring to an airtight container.
