Ingredients:
1 whole frond of oarweed
groundnut or sesame oil for deep frying
Method:
Collect a single frond of oar weed. Wash thoroughly then hand up in your kitchen to dry (about 3 days should be enough). Cut into 3cm squares then add a 2cm depth of groundnut or sesame oil in a wok. When hot add a few of the oarweed pieces. The oarweed pieces will expand very quickly and will turn brown.
Remove with a slotted spoon after only a few seconds and transfer to kitchen paper to drain. These are very salty and make an excellent accompaniment to an aperitif of drinks. They can also be roughly chopped and added to salads or can be served with tomato and chilli-based dips.
