This is a traditional recipe from New Zealand dating to the 1950s. It comes from a collection of family recipes given to me by a friend, and which I am only just now getting the time to properly redact.
Mix the ginger to a smooth paste with a little water. Add to a pan along with the remaining ingredients, bring to a boil and allow to cool. Tip into a sterile bucket and place in a warm spot to stand for 3 days.
Strain and bottle. Leave aside in a cool place for 2 weeks before drinking.
