Nuoc Mam Cham (Fish Dipping Sauce)

Nuoc Mam Cham (Fish Dipping Sauce) is a traditional Vietnamese recipe for a classic dipping sauce made from a boiled blend of water, fish sauce, rice vinegar and sugar mixed with garlic, chilli and lime juice. Ingredients:

120ml water
3 tbsp fish sauce
3 tbsp rice vinegar
2 tbsp sugar
2 garlic cloves, finely chopped
1 birds' eye chilli, finely chopped
2 tbsp lime juice

Method:

In a saucepan, mix together the fish sauce, rice vinegar, sugar and water. Scald over medium heat (cook until just before the boiling point) then take off the heat and set aside to cool.

Just before serving, whisk in the chilli, lime juice and garlic. Divide between small dipping bowls and serve as an accompaniment.
