Method:

Place a small non-stick pan over medium heat. Once hot add in the whole spices and toast, stirring constantly, for about 2 minutes (take cake the spices do not burn). Turn out onto a plate and allow to cool.

Once cooled tip the whole spices into a spice or coffee grinder then add in the ground nutmeg and Indian bay leaf. Pulse to chop then run the motor to yield a fine powder.

Store in an air-tight jar where it will keep in a cool, dark, place for 4 months.
