No-bake Cheesecake II

No-bake Cheesecake is a traditional American recipe for a classic quick-cook cheesecake made with cottage cheese and condensed milk on a biscuit (cookie) crumb base that does not require baking. This is a very quick version of a cheesecake and takes no more than half an hour to prepare, but does need to be chilled over night. Delicious and ideal for the impatient!

Method:

Either beat the biscuits in a plastic bag or process in a food processor until finely crushed. Cream the butter in a bowl then add the biscuit pieces and mix thoroughly. Press half this biscuit mix into the base of a greased and lined 20cm springform tin then use the back of a spoon to spread the remaining mix around he sides of the tin (make a small lip at the base to help the crumb mix stand up). Transfer to the refrigerator and chill for 15 minutes to set.

In the meantime, pass the cream cheese through a fine-meshed sieve then beat until smooth and creamy. Add the lemon zest and vanilla extract and beat thoroughly to combine then, still beating continuously, add the condensed milk and the lemon juice and continue beating until smooth and thoroughly combined.

Pour the resultant mixture into the prepared tin and refrigerate over night before carefully removing from the tin and transferring to a serving plate.
