Nihari Masala

This is a classic Mughlai spice blend for preparing mutton (goat meat) especially slow-cooked cuts like shanks.

Ingredients:

2 Star Anise
1 Nutmeg
3 Bay Leaf
3 pieces Cinnamon Stick (3cm each)
20 Black Peppercorns
15 Green Cardamom pods
1 tbsp Coriander Seeds
½ tbsp Cumin Seeds
1 tbsp Fennel Seeds
10 Cloves
1 tbsp powdered Ginger
1 tbsp Red Chilli Powder
1 tbsp ground Turmeric

Method:

Dry toast the whole spices in a wok over medium-high heat for 2 minutes. Turn out onto a plate and set aside to cool.

Once the spices have cooled transfer them to a spice blender or coffee grinder and render to a coarse powder.

Now add 1 tbsp each of dried ginger powder, red chilli powder, and turmeric powder into the spice blend. Pulse to blend.

Transfer to a screw-top jar and store. You will heed about 4 1/2 tbsp of the Nihari Masala for 1 kg of meat.
