This is my own variant of a classic herb and spice mix used by restaurants and fast food restaurants as a basic spice blend in Nigeria. It is a mix of more common herbs and spices as well as traditional 'Pepper Soup' spices.

Method:

Combine all the ingredients in a bowl and stir with a fork to mix thoroughly. Spoon into a jar, seal with a tight-fitting lid and store in a cool, dark, cupboard.

This is a basic seasoning blend that can be used with chicken, turkey, goat meat, beef or giant African land snails.
