New Potato Parcels: An Irish recipe for an accompaniment of new potatoes baked in individual parcels with mixed herbs.

Ingredients:

500g very small new potatoes
60g butter
4 sprigs of fresh tarragon
4 sprigs of fresh thyme
4 sprigs of fresh rosemary
4 plump garlic cloves
sea salt, to taste

Method:

Take a sheet of greaseproof (waxed) paper and cut out four 23cm diameter circles from it. Now take the paper and cut out four more circles, which should be slightly larger than the first four.

Butter one side of each circle. Take the larger circles and layer on 1/4 of the potatoes, a sprig of each herb and a garlic clove on each one. Season with salt then cover with the buttered side of the smaller greaseproof paper circle. Twist the edges of the circles together to seal.

Arrange the paper parcels on a baking tray and transfer to an oven pre-heated to 200°C. Bake for about 20 minutes, or until the potatoes are tender.

Serve the potatoes directly from the paper parcels.
