Ingredients:
1 dried ancho or mulato chilli
1 dried pasilla chilli
3 dried New Mexico chilli
4 dried de arbol chilli
1 1/2 tablespoons ground cumin or toasted cumin seed
1 1/2 tablespoons smoked paprika
1 tablespoon Mexican oregano
2 teaspoons ground white pepper
Method:
Place the chillies on a baking tray and place in an oven pre-heated to 120°C. After about 2 minutes turn the chillies then cook for a further 2 minutes (take care not to burn).
Allow the chillies to cool then place all the ingredients in a coffee grinder and render to a powder.
