Ingredients:
400g young stinging nettle tops
1/2 tsp salt
50ml milk
2 tbsp butter
freshly-grated nutmeg to taste
freshly-grated black pepper, to taste
Method:
Add the nettle leaves to a pan with 1 tbsp water and salt. Bring to a boil, reduce to a simmer then cover and cook for about 15 minutes or until the nettles have wilted (after this the hairs on the nettles will be destroyed and they will no longer be able to sting).
Chop the leaves as finely as you can then return to the pan and stir-in the milk and butter. Season with nutmeg and freshly-ground black pepper. Serve as you would any greens.
