Ndrovi ya Nazi (Banana with Coconut Milk)

A Comorian speciality based on fish or meat and green bananas or plantains and spices cooked in coconut milk.

Ingredients:

8 green bananas (not ripe) or plantains
4 large pieces of fish (tuna, tilapia, etc) or replace the fish with meat
2 garlic cloves, peeled and crushed
500ml of coconut milk
2 teaspoon crushed chillies
100ml sunflower oil
½ lemon
Sea salt

Method:

Peel the bananas, wash them then cut them into 3 pieces each.

Wash the fish pieces then transfer to a lidded container. Add in half of the crushed garlic and the chilli pepper. Close the container and shake it to distribute the chili and garlic all over the fish. Set aside to sit for 10 minutes.

Heat the sunflower oil in a pan, and use to fry the fish pieces over high heat until they are nicely browned.

In a saucepa, combine the bananas, the fish, the remainder of the garlic and 2 glasses of water. Place over low heat, cover and cook for 15 minutes.

At this point, add the coconut milk and the remainder of the chilli pepper. Mix gently without crushing the bananas. and cook for 10 min.
