Nanohana no Karashi Miso-ae (Rape Blossoms in a Spicy Miso Sauce)
Nanohana no Karashi Miso-ae (Rape Blossoms in a Spicy Miso Sauce) is a traditional Japanese recipe for a classic acompaniment of boiled rapeseed flower heads served in a blend of white miso, sugar, hot mustard and sake. Ingredients:
225g nanohana (rapeseed) blossoms tops (pick rape tops with flower buds that have not opened yet)
4 tbsp white miso
2 tbsp sugar
1 tsp neri-karashi (hot mustard)
1 tsp sake
Method:
Bring a pan of very lightly salted water to a boil. Add the nanohan blossom tops and parboil for about 2 or 3 minutes, or until just tender. Drain, refresh in a bowl of iced water then drain once more and pat dry.
Whisk together the white miso, sugar, hot mustard and sake in a bowl. Add the rapeseed blossom and toss to coat. Serve at room temperature.
