Nan Mburu

This is a classic Gambian rice and baobab dessert that is most particularly associated with Good Friday, though it can be served picnics, birthday parties, and sometimes in ceremonies. Indeed, in the Gambia Good Friday is known as Nan Mburu day as almost every Christian family will be preparing this dish.
Ingredients:
1 cup baobab powder (raw baobab pulp with seeds is typically used)
1kg packet rice flour
200g (1 cup) sugar
1 tsp vanilla extract
1 tsp freshly-grated nutmeg
1 tin condensed milk
2 bananas, sliced
100g raisins
6 tbsp coconut flour
Method:
Put the rice flour in a large bowl, then slowly add water whilst mixing in circular motions with your fingers to create small balls. You are aiming for balls that are approximately the same size, so they cook evenly. Make sure you break up any of the larger rice flour balls to make them smaller.
Place the baobab pulp in a large bowl, pour over 500ml (2 cups) water and set aside to soak for 15 minutes. Strain the baobab pulp into a clean bowl, breaking up any clumps of powder and incorporating into the liquid. Strain the liquid through a fine-meshed cloth and set aside.
Bring a large pot of water to a boil. Transfer the rice balls to a colander, sit this over the boiling water and steam for about 15 minutes, until cooked. When the rice balls are done, transfer to a large bowl, pour over some hot water then set aside until they cool down.
Once the rice balls have cooled down, start mixing in the baobab juice, so the rice balls break down and dissolve into the baobab liquid. Once all the baobab juice has been integrated, mix in the sugar, vanilla extract, nutmeg and condensed milk.
Transfer to your refrigerator and chill for 2 hours. After this time, stir in the coconut flour, sliced bananas and raisins.
Divide between bowls and serve.
