Mustard-glazed Flatfish is a modern English recipe (originating in Cornwall) for a classic dish of flatfish cooked by grilling (broiling) with a butter, wholegrain mustard, brown sugar and lemon juice glaze. This is an interesting way of cooking flatfish by spreading with wholegrain mustard before frying.
Ingredients:
2 lemon sole, megrim sole or plaice fillets (about 175g [7 oz] each)
generous knob of butter
2 tsp wholegrain mustard
1 tsp brown sugar
lemon juice
salt and freshly-ground black pepper, to taste
Method:
Pre-heat your grill then grease the rack of your grill pan. Lay the fish, skin side down, on the grill pan. Season well and dot with the butter then spread over the mustard. Sprinkle over the sugar and lemon juice then place under a medium grill.
Cook for between 5 and 6 minutes, without turning them.
