Mustard-crusted Herring

Ingredients:

4 fillets of herring (serve two per person)
4 dessert spoons pinhead oatmeal
2 dessert spoons Dijon mustard
1 dessert spoon honey

Method:

Combine the oatmeal, mustard and honey in a bowl. Use this mixture to spread on the non-skin side of the fish.

Pre-heat a griddle pan or barbecue then lay the fish on this, skin side down. Cook for between 5 and 8 minutes (depending on the thickness of the fillets) then flip the fish over and cook on the mustard-coated side. Cook only long enough to colour this side (about 2 minutes).

Serve immediately accompanied by a salad of wild rocket, sun-dried tomatoes, black olives and sunflower seeds. If desired you can add a dressing of crème fraîche and horseradish sauce.
