One excellent trick when barbecuing is to add a cup (about 140g) of wood chips to the coals. When they begin to smoke they will flavour the fish, meat or vegetables your are barbecuing. Apple wood chips work for just about everything, as does hickory and mesquite. Oak is also excellent for fish dishes.

The aroma of musk has long been used in perfumery and cooking. The Elizabethans and Stuarts considered it to be an aphrodisiac. Originally it can from animal glands, but a number of plants also have the musk aroma. This recipe uses musk mallow seeds to flavour barbecued chicken wings, bringing back a long-lost spice sensation to the kitchen.

Ingredients:

1.2kg chicken wings
4 garlic cloves, finely chopped
60ml olive oil
2 tbsp soy sauce
60ml rice wine vinegar
60ml honey
2 tsp ground musk mallow seeds
1 tsp dried thyme
1/2 tsp powdered ginger
1/2 tsp mustard powder
140g apple wood (or hickory) wood chips, soaked in water

Method:

Whisk together all the liquid ingredients and spices in a bowl. Add the chicken wings and toss to coat. Cover and refrigerate for 2 hours. Every 20 minutes or so, toss the contents of the bowl to ensure that the chicken wings are well coated.

In the meantime, heat your barbecue and when the chicken wings have marinated sufficiently and the charcoal is turning white drain your wood chips and add to the barbecue. As soon as the chips begin to smoke add the chicken wings and cook for about 10 minutes on one side. Baste with any remaining marinade then turn and cook for 10 minutes on the other side, or until done. Serve immediately as a starter.
