A frittata is an egg-based Italian dish similar to an omelette or crustless quiche or scrambled eggs, enriched with additional ingredients such as meats, cheeses, or vegetables. The word frittata is Italian, derives from friggere and roughly translates to "fried". This version is adapted to be part-fried and finished by grilling (broiling).
Ingredients:
500g mushrooms (a mix of button, chestnut, porcini)
2 garlic cloves, finely chopped
1 tsp olive oil
2 large eggs, beaten
2 egg whites, whisked
1 tbsp chopped parsley
Method:
Fry the mushrooms and garlic in a large pan until the mushrooms are tender. Preheat a grill then add the eggs and egg whites to the mushrooms and fry, stirring with a fork to make the omelette base light and fluffy. Add a twist of pepper to season at this stage.
Cook the omelette until its base has set then sprinkle the top with parsley and place under the grill (broiler) until the top has browned.
