Mushroom Fricassee

Though this is a modern American recipes, the antecedents of fricassees go back to the Medieval period and they were a popular dish in Stuart times.
Ingredients:
1 small onion, finely chopped
4 celery sticks, finely chopped
1 clove garlic, finely chopped
200g button mushrooms
150g chestnut mushrooms
1 vegetable stock cube in 100ml boiling water
50ml dry white vermouth
1 egg yolk
150ml sour cream
25g butter
50g fresh breadcrumbs
2 tbsp fresh
parsley
salt and pepper to taste
Method:
Whisk the egg yolk into the sour cream. Meanwhile melt half the butter in a frying pan and toss in the breadcrumbs, cooking until golden brown. Tip these out and set aside.
Add the remaining butter to the pan along with the onion, celery and garlic. Cook these until soft then add the mushrooms and continue cooking until the button mushrooms turn a golden brown in colour. Now add the stock and vermouth, bring to the boil and continue cooking until the volume of the liquid reduces by half.
Reduce the heat at this stage, add the sour cream mixture then continue cooking until the sauce thickens slightly. Transfer to a heated bowl, season then top with the breadcrumbs and serve immediately.
