This is a classic Zimbabwean greens dish (nemuriro) made with rape greens (but you could substitute any cruciferous greens). Rather than being boiled, these greens are stir-fried to cook. As well as the leaves you can also make this dish from the unopened flower blossoms.
Ingredients:
1 Bunch of Rape greens (muriwo weRape)
3 tbsp frying oil
1 tsp salt
Method:
Wash the greens thoroughly under running water and break-off steam. Slice the greens into thin strips.
Heat oil in pan and when hot test if oil is ready by throwing a strip of the vegetables. If the strip sizzles add rest of the greens and the salt. Cook, stirring occasionally for the next 5 to 8 minutes. (Do not exceed 8 minutes cooking time; you want the greens well wilted but not crispy).
