These are the classic Indian spiced chicken kebabs. Marinated in a spicy masala mix the chicken is cooked over charcoal and comes out flavourful and tender every time. Like many Indian dishes the original recipe here calls for a pinch of red food colour. I’ve omitted than and increased the Kashmiri chilli a bit. You can re-introduce the colouring if you like.
Ingredients:
600g chicken thigh fillets, cut into cubes
To Marinate Chicken:
3cm (1 in) piece fresh ginger
1 ½ tsp cumin seeds
½ tsp ground coriander (coriander powder)
½ tsp
garam masala
1 tsp paprika
2 tsp red chilli powder (Kashmiri chilli)
2 tbsp lemon juice
6 garlic cloves
2 tbsp yoghurt
2 tbsp oil
Salt to taste
Method:
Place chicken pieces in a large bowl and drizzle over the lemon juice. Mix with your hands, season with salt and mix again. Cover the bowl, place in the refrigerator and marinate for 10 minutes.
In the meantime, combine the ginger, garlic, cumin seeds, garam masala, ground coriander, red chilli powder, and yogurt in a blender, and process to form smooth paste. (Add a little water if needed.)
Add this paste to the chicken. Again, mix with your hands to ensure the chicken is completely coated. Cover the bowl and marinate in the refrigerator for another 30 minutes or overnight if possible.
To cook, pre-heat your barbecue (or charcoal grill). Thread the chicken pieces onto skewers (either metal or bamboo skewers soaked in water for 20 minutes). Cook over hot charcoal for 10-15 minutes or until cooked through.
Serve accompanied by rice or flatbreads and a salad.
