This is a base multi-grain mix that can be used as the basis for muesli or can be added as a topping to yoghurt or as a base to multi-grain breads and cakes. Don't worry if you do not have some of the ingredients, just bulk-out with the others or substitute different grains.

Ingredients:

140g long-grain brown rice
140g millet
100g whole barley
100g whole oats
100g quinoa
100g amaranth seeds
35g wild rice or red rice
45g pumpkin seeds
45g flax seeds
45g toasted sesame seeds
60g walnuts, chopped
2 tsp salt

Method:

Combine the rice, millet, barley, oats, quinoa and amaranth berries in a fine-meshed sieve and wash. Drain then turn into a large heavy-bottomed pot. Stir in the salt then add cold water so it comes about 5cm above the grains. Bring the mixture to a boil then turn the heat down to a very low simmer.

Cook, uncovered, for about 30 minutes, or until all the water has evaporated. Set aside to cool then mix in the seeds and walnuts. This will keep for up to a week.
