There are long links between Arabia and the Horn of Africa. The recipe originated in Yemen, but it was introduced into Djibouti and has now become an component of Djiboutian barbecue cuisine.

Ingredients:

2 whole fish or fillets of firm, non-oily white fish (red snapper is ideal)
6 tbsp Yemeni hawaij seasoning
1 lemon
2 1/2 tbsp walnut oil mixed with 2 1/2 tbsp extra-virgin olive oil
hickory wood chips (if barbecuing) or 1/2 tsp. hickory liquid smoke (if grilling)

For serving:
2 ripe bananas
2 tbsp honey or to taste
1 laxoox bread
1 tbsp butter
A sprinkling of freshly-grated nutmeg
Crushed pistachios
2 laxoox bread, to serve

Method:

If barbecuing, make sure your pre-heat your barbecue so that it has enough time to become very hot (at least an hour's lead time if using charcoal).

It using whole snapper (and you should be!), have the fishmonger clean, scale and gut the fish, then butterfly along the spine.

Sit the prepared fish in a bowl or baking dish and squeeze over the lemon then brush with the blend of walnut and olive oil (skin and flesh side).

Sprinkle the hawaij seasoning evenly over the flesh of the fish. Cover then set aside to marinate in the refrigerator for at least 30 minutes (and preferably 3 hours).

Cover the fish with kitchen foil then cook on your barbecue for 10–20 minutes (the foil will prevent the fish from breaking up).

In the meantime, peel and cut the bananas crosswise into 3cm pieces, then fry in olive oil for 4-5 minutes until golden brown on each side, and soft-ish to a fork. Add butter, honey and nutmeg and mash lightly. Crush the laxoox into the purée to thicken

Place the laxoox bread in a warm oven to heat.

When all items are ready, place a laxoox bread on the plate, put the fish and banana puree on top then garnish with crushed pistachios. Season to taste with sea salt flakes and serve.
