Mtedza Puffs is a traditional Malawian recipe for a classic biscuit (cookie) snack of peanut, flour and butter balls that are oven baked and dusted with sugar. The full recipe is presented here and I hope you enjoy this classic Malawian version of: Mtedza Puffs.
Cream together the butter and sugar. Add the peanuts, vanilla and flour. Roll the mixture into small balls and place on a greased baking sheet. Place in an oven pre-heated to 160°C (320°F/Gas Mark 3) and bake for 25 minutes.
Remove from the oven and whilst still hot roll in icing sugar. Allow to cool and once cold roll in the icing sugar once more.
