Mozzarella Fritters: An Irish recipe for a vegetarian dish or snack of fritters made from a blend of potatoes and mozzarella cheese fingers bound with egg yolks that are breaded before frying.
Ingredients:
550g potatoes, boiled in their skins
2 egg yolks
40g butter, melted
150g mozzarella cheese, cut into fingers
2 eggs, beaten
100g dry breadcrumbs
salt and freshly-ground black pepper, to taste
oil for deep frying
Method:
Peel the potatoes then return to the pan and heat briefly to dry them out. Mash until smooth then take off the heat and beat in the egg yolks along with the butter and a little black pepper (you should end up with a stiff dough).
Set the dough aside until cool enough to handle then flour your hands, set some of the dough int your palm and place a finger of mozzarella in the centre. Seal the potato dough over the cheese then roll into a sausage shape.
Coat in beaten egg, then roll in the breadcrumbs to coat evenly. Repeat this process with the remaining potato mixture and the cheese.
Half-fill a deep frying pan with oil and heat to 190°C. Add the mozzarella fritters in batches and cook until golden brown. Remove with a slotted spoon and drain on kitchen paper as you cook the next batch.
Serve hot.
