Morogo

Also known as moroho, this is a classic South African accompaniment of greens and potatoes. Typically Swiss Chard (locally known as 'spinach') is used but it can also be made with spinach, amaranth greens or rape greens.

Ingredients:

675g spinach or Swiss chard
675g potatoes, peeled and quartered
1.5l chicken stock

Method:

Place the greens in the bottom of a large saucepan and place the potatoes on top. Add the chicken stock and bring to a boil. Reduce to a simmer, cover and cook for about 35 minutes, or until the potatoes are tender. Once the potatoes are done, drain off the majority of the liquid then mash the potatoes and greens together with a potato masher.

Season and serve.
