Ingredients:
200g granulated sugar
250ml water
2 tbsp fresh monrda (bee balm) flowers (use the soft outer petals)
1 drop of red food colouring
Method:
Wash the bee balm flowers then add to a pan along with the sugar and water. Bring the mixture to a boil and continue cooking until the volume has reduced by half.
Take of the heat and stir in the food colouring. Strain into a bowl and set aside to cool.
Use as a dressing for fruit salads, melons and ice creams.
