This is a classic Nepali dipping sauce typically served with momos.
Ingredients:
10 tomatoes, chopped
3 tbsp of sesame seeds
1 tbsp of cumin seeds
2 tbsp of sunflower oil
2 tbsp of red chilli paste
2 tbsp of garlic paste
2 tbsp of ginger paste
1 tbsp of ground coriander seeds
1 tbsp of turmeric powder
1/4 tsp Szechuan peppercorn powder
2 tsp of salt
1 tbsp soy sauce
1 lemon
500 ml of water
Method:
Place a small frying pan over medium heat. Add the sesame seeds and cumin seeds and toast for about 90 seconds, stirring, until aromatic. Turn out onto a plate and set aside.
Place a wok or deep frying pan over medium heat. Add in the sunflower oil and when hot add the tomatoes and toasted sesame and cumin seeds. Now stir in the chilli paste, garlic paste, ginger paste, ground coriander seeds, Szechuan peppercorn powder and turmeric powder. Stir well to combine.
Cook, stirring, for 5 minutes or until the tomatoes have begun to break down then stir in the salt and soy sauce. Add the water, bring to a simmer and cook for 5 minutes more.
Take off the heat, allow to cool slightly then turn into a blender and process to a smooth purée. Add lemon juice to adjust the acidity to your taste.
Serve with pork momos, chicken momos, buff momos and vegetable momos.
