Molokhia

Ingredients:

50g fresh fresh molohia (molokhia) leaves (you can substitute European common mallow leaves [a related plant with similar properties], or at a pinch, spinach leaves); washed and chopped
2 chicken breasts, diced
1 large onion, diced
120ml water
2 tbsp butter
10 cloves garlic
2 tbsp coriander seeds
180g cooked rice
1 tbsp vinegar
toasted pita bread, cut into triangles
salt and black pepper

Method:

Combine the meat, onion and water and season with salt and pepper. Bring to the boil and simmer until the meat is tender (about 10 minutes).

Add the spinach and boil for 5 minutes longer. Meanwhile fry the garlic and coriander in a little butter in another pan for 1.5 minutes. Add the meat and onions to the fried ingredients and stuff the mixture into the pita breads.

Serve with rice as an accompaniment.
