Modelling Paste: A British recipe for a thick sugar paste flavoured with lemon juice that's typically used for making cake decorations that is shown shaped into various figures.

Ingredients:

50g (2 oz) lard
2 tbsp lemon juice
2 tbsp water
700g (1 1/2 lb) icing sugar, sifted
food colouring (depending on your design)

Method:

Heat together the lard and lemon juice in a pan with the water until the fat melts. Now stir in 225g (8 oz) of the icing sugar and continue cooking over very low heat until the sugar dissolves and turns semi-opaque (about 2 minutes).

Take the pan off the heat and stir in the remaining sugar until you the mixture comes to a dough-like consistency. Turn out onto a work surface dusted with icing sugar and knead for a few seconds before dividing in half. Now work in a little food colouring until you have pieces of the colour (or colours) you have chosen. If not needed, store the paste in plastic bags.

When ready to use roll out the paste. As an example, to make paste roses roll out circles about 2cm (4/5 in) and 1.5cm (3/5 in) in diameter. Sit these on top of one another and shape into flowers, curving the circular pieces around and pinching them into shape. Set on a tray to dry over night.

The following day use the paste flowers to decorate you cakes or cupcakes. As well as paste roses made of circles you can also make rolled paste roses with this mixture.
